Oyster Mushroom shawarma
ingredients
For about 4 pitas
0.5 kg oyster mushrooms
0.5 cup olive oil
2 spoons turmeric
1 spoons fine salt
0.5 spoon fresh ground black pepper
For the grilling
Half a big onion and half a cup of olive oil in a bowl.
Method
Tear the mushrooms by hand into a two fingers size (make the cut at the base of the mushroom)
Place the turned mushroom in a large bowl
In a small bowl Mix all the spices together
Sprinkle a spoon of the spices mix on top of the mushroom
Then mix the mushrooms by tossing the bowl (using a spoon will tear the mushroom so don’t use any) you can also mix by hand try to be as gentle as possible
Sprinkle another spoon of the spices mix and mix again
Repeat the prosses until all the spices mix is done and most of the mushrooms are coated with the spice mixture
Do the same thing with the olive oil bit by bit add and mix the mushrooms with the oil trying not to break the mushrooms
Place the spiced mushrooms on a flat tray cover them with a plastic wrap and let sit at room temp till the charcoals are ready
light the charcoals and let them burn totally till they all turned white.
In the meantime prepare the salads
Instant pickled radishes
Ingredients
5-6 radishes cut into bite size pieces
Juice from 1 lemon
Method
Place in a small bowl let sit till they get all pink
Grilled salad
Ingredients
1 large very red tomato
1 small onion
1 small hot pepper
Method
Grill them on an open flame
Peel and roughly chopped all together Season with some salt and a drizzle of olive oil
Cabbage salad
Ingredients
Half a cabbage thinly sliced
2 garlic cloves thinly chopped
4 spoons olive oil
Juice from half a lemon
Coarse salt for seasoning
Method
Place all the ingredients in a large bowl season with some salt and give it a good massage for about 3-5 min. the salad is ready when you get louds of liquid out from the cabbage.
Herb mix
Ingredients
Grab a handful of fresh parsley
coriander and
some mint leaves
Method
Roughly chop the ingredients
Place in a bowl and mix well
Tahini
Ingredients
¾ cup Tahini - choose your favourite brand, each is different
A few drops of lemon
Coarse salt
Method
I love to taste the sweetness of the sesame so I use only few drops of lemon juice and few grains of coarse salt. Place about ¾ cup of tahini in a bowl add 4-5 drops of lemon juice 5-6 grains of salt and slowly add cold water while mixing until you get a smooth silky liquid cream texture
grilling
Pinch a long fork in the onion and slide it on the grill net (be careful from the flames). Soak the onion over and over again and let the grill’s net get covered by the onion’s oil. Place the mushrooms on the grill and flip them every minute or so, oil the them with the onion on every flip.
The mushrooms are ready when they are golden brown and some parts are crispy
Move the grilled mushrooms to a cutting board and slice them thin.
Adding amba to the pita will make it perfect try to find one that contains true mango in it and not just spices.
Layer each pita with tahini salads and mushrooms a perfect pita is a pita which in each bite you take you get all the flavors and textures.
